Mexene Chili Crusted Ham

Ingredients

  • 1 8 - 10 lb  Fresh Pork Ham
  • 1   Heavy Duty Disposable Roasting Pan
  • 2 3 oz  Bottles of Mexene Chili Powder
  • 1 tbsp  Granulated Garlic
  • 1 tbsp  Onion Powder
  • 2 tbsp  Cumin
  • 4 tbsp  Dark Brown Sugar
  • 1 tbsp  Cajun Injector Hickory Shake
  • 1 12 oz  Can Coca-Cola
  • 1 16 oz  Jar Cajun Injector Hickory BBQ Marinade

Directions

  1. Preheat oven to 400 degrees F. Remove the skin from the ham, trying to keep in one piece and save for later use.
  2. Place ham in roasting pan. Inject 2 oz of hickory marinade per pound of meat. Combine all of the dry seasonings and mix well.
  3. Take the seasoning blend and pat on the ham. Be liberal and cover it completely on all sides.
  4. Cover the ham with the skin that was removed earlier. Pour the coke into the pan (but not over the ham) and cover very tightly with foil.
  5. Bake for 4 hours or until tender. Do not open the pan while cooking.
  6. Remove from oven, let cool and pull apart to make sandwiches.
Yield: 25 sandwiches
