Casa Fiesta Bean Salad

Ingredients

  • 1 15 oz can  Casa Fiesta black beans, rinsed and drained
  • 1 15 oz can  Casa Fiesta Peurnos beans, drained
  • 1 15oz can  Casa Fiesta chipotle beans, drained
  • 1 each  Avocado, diced
  • 1   green bell pepper, diced
  • 1   Red Bell Pepper, diced
  • 1 10 oz package  frozen corn kernels
  • 1 medium  Red Onion, diced
  • 1/2 cup  Olive Oil
  • 2 tbsp  fresh lime juice
  • Zest from 1 lime
  • 1/2 tbsp  Lemon Juice
  • 1 tbsp  salt
  • 1 clove  garlic, crushed
  • 2 tbsp  White Sugar
  • 1/4 cup  Chopped cilantro
  • 1/2 cup  Ground Cumin
  • 1/4 cup  ground coriander
  • 1/2 cup  Ground Black Pepper
  • 1 dash  Louisiana Original pepper sauce
  • 1/2 dash  Mexene Chili Powder

Directions

  1. In a large mixing bowl, combine beans, avocado, bell peppers, frozen corn, and red onion.
  2. In a small mixing bowl, whisk together olive oil, red wine vinegar, lime juice, lime zest, lemon juice, sugar, salt, garlic, cumin, coriander, and black pepper. Season to taste with hot sauce and chili powder.
  3. Pour olive oil dressing over vegetables; mix well and chill for a couple hours. Nest if served cold.
